Care Instructions

Keep refrigerated below 4 degrees.

  • Remove your smoked lamb from the vacuum bag 24 hours before carving.
  • Keep your smoked lamb refrigerated in a vinegar soaked ham bag or cotton pillow case.
  • Your smoked lamb will last until the expiry on the vacuum pack and then 3-4 weeks out of the pack if refrigeration temperature remains below 4 degrees and use of the vinegar soaked cloth bag is used.
  • Our Smoked Lamb is also great glazed. Use your favourite glaze mix and wrap the lamb tightly in foil to prevent drying out.
  • Cook on 180°C for 40min then reduce heat to 150°C for a further 40min.
  • The bones make a unique Pea and Smoked Lamb Soup. 
  • Smoked Lamb Bacon lasts until expiry on pack, approx 90 days, once seal is broken, must be cooked within 3 days.

The 'Full Bone in Leg of Australian Lamb' and 'Boneless Leg of Australian Lamb' have been cured and then naturally wood smoked using beechwood chips and fresh rosemary. The velvety texture of the lamb is prominent and the sweet, buttery flavour is highlighted by the hint of fresh rosemary flavour and aroma. Silverwood Black Label Smoked Lamb won a national finalist position in the 2015 Delicious Produce Awards and most recently won Bronze and Silver at the Australian Food Awards 2016 and then again at the Sydney Royal Fine Food Show 2016! This one of a kind lamb product will impress!

Our Unique Story

Maree & Andrew King

Maree and Andrew created Silverwood Fine Foods after selling their Longreach Sheep station where they grew award winning Dorper lambs, and where in 2013, they developed their first medal winning product Silverwood Black Label Smoked Lamb. Maree and Andrew remain strong advocates of the Australian Lamb and red meat industry. This year they developed another unique product, Silverwood Black Label Smoked Lamb Bacon, with new lamb products on the horizon. Silverwood Fine Foods is a family owned and run business with their goal being to provide unique gourmet products of the highest quality.
